Leftover chicken makes a great hearty sandwich, or you can buy precooked chicken for a convenient fuss free option.


6 oz cooked sliced chicken
1 whole wheat bun
6 slices red pepper
2 tbsp butter
4 tbsp mayonaise
2 tbsp pesto
3 slices mozzarella cheese


spread inside of bun with butter and grill in skillet until lightly browned. Spread mayonnaise and pesto on the inside of top and bottom. Arrange chicken slices, cheese and pepper slices on bun and enjoy.
