Traditional Peruvian Roast Chicken doused in Aji Verde, a wonderfully spicy green chili sauce.


1 Head of garlic
1 Maple Leaf Prime Naturally® Whole Chicken
Salt and pepper
2 tbsp (30 mL) Lime juice
2 tsp (10 mL) Paprika
.5 tsp (2 mL) Pepper
.5 tsp (2 mL) Cumin
1 tbsp (15 mL) Soy sauce
1 tsp (5 mL) Sugar
2 tbsp (30 mL) Olive oil
1 Jalapeno pepper, seeded and chopped
1 cup (250 mL) Cilantro leaves
2 Cloves garlic
.5 cup (125 mL) Mayonnaise
.25 cup (60 mL) Sour cream
1 tbsp (15 mL) Lime juice
.5 tsp (2 mL) Salt
.125 tsp (.5 mL) Pepper
2 tbsp (30 mL) Olive oil


PREHEAT oven to 375°F (190°C).

PEEL and crush five cloves of garlic and set aside. Cut remaining garlic in half horizontally. Season the chicken inside and out with salt and pepper. Place the halved garlic inside the cavity of the chicken. Combine crushed garlic with lime juice, paprika, pepper, cumin, soy sauce and sugar. Rub mixture all over chicken and place breast side down on a rack set in a roasting pan. Brush chicken with olive oil and roast in preheated oven for 35-40 minutes. Remove pan from oven and turn chicken breast side up. Baste with pan dripping and return to the oven for another 20-25 minutes or until chicken is golden brown and the internal temperature reaches 185°F (85°C). Remove from the oven and let stand for 10 minutes prior to carving.

COMBINE all of the ingredients for sauce in a blender or food processor. Blend until smooth. Serve with chicken.
