Maple Leaf Butter and Herb stuffed chicken is a perfect partner for this delicious side dish!


12 oz whole wheat pasta
any kind you prefer
I used spaghetti
1 can of diced tomatoes (I used spicy red pepper)
4 cups chicken stock
null splash of tomato juice
1 cup mushrooms
1 cup bell peppers
1 Pkg frozen spinach
null salt and pepper
to taste
null garlic salt
to taste
null parmesan cheese
to taste
drizzle of canola oil


Wash and chop vegetables. I used mushrooms and orange bell pepper, you can use whatever you have on hand. Place all ingredients (except parmesan cheese) in a large pot on stove. Cover with lid and bring to a boil. Once boiling, reduce to medium heat and remove lid. Cook for about another 15 minutes. It should still be boiling, during that time. Stir occasionally to prevent pasta from sticking to bottom of pot. The pasta and vegetables will cook in their own sauce and will eliminate the need for draining the liquid. Once the pasta is cooked to your liking, remove from heat and let it sit for a couple of minutes, then add some parmesan, to taste. Serve with Maple Leaf Butter and Herb stuffed chicken and enjoy!
