A deliciously meaty frittata featuring pepperoni. This is the perfect dish to make when having a few people over for brunch.
|1 tsp||(5 mL) Dried thyme|
|1 tsp||(5 mL) Dried oregano|
|1 cup||(250 mL) Grated Cheddar cheese, divided|
|1/2 Pkg||Maple Leaf® Natural Selections® Sliced Pepperoni|
|1 tbsp||(15 mL) Vegetable oil|
|1||Small onion, chopped|
|1||Red pepper, chopped|
PREHEAT broiler to high.
WHISK eggs, thyme, oregano, ½ (125 mL) cup cheese and pepperoni together in a medium bowl.
HEAT oil in a large oven-proof fry pan over medium heat. Add onions and peppers. Cook for 3 to 5 minutes or until onions are translucent and peppers are tender crisp. Add egg mixture and cook for 3 to 5 minutes or until mixture is almost cooked. Remove from heat and sprinkle with remaining cheese.
PLACE pan under preheated broiler. Broil until cheese is melted and bubbling, about 5 minutes. Remove from broiler.
DIVIDE frittata into 4 and serve immediately.
