Fresh and colourful, the perfect summer meal. The sweetness of caramelized onions and zucchini with salty salami and smoky roasted peppers. A sprinkle of cheese and fresh herbs to top it all off.
|1/2 lb||(225 g) Penne or your favourite pasta|
|2 tbsp||(30 mL) Butter|
|2 tbsp||(30 mL) Olive oil|
|1||Large onion, thinly sliced|
|1 lb||Schneiders® Deli Best Dry Salami, thinly sliced into strips|
|1||Roasted red pepper, thinly sliced|
|Salt and pepper|
|1/3 cup||(80 mL) Grated Pecorino or Parmesan cheese|
|1 tbsp||(15 mL) Chopped fresh oregano|
COOK pasta in plenty of boiling, salted water for about 9 minutes or until al dente. Drain well and reserve 1 cup (250 mL) of the pasta water.
HEAT butter and oil in a large skillet over medium. Add onion and cook, stirring occasionally for 15-20 minutes or until nicely caramelized. Stir in salami strips followed by zucchini and roasted peppers. Season to taste with salt and pepper. Stir in pasta and add pasta water, ¼ cup (60 mL) at a time. Cook until sauce coats the pasta adding more pasta water as needed.
SPRINKLE with Pecorino cheese and chopped fresh oregano.
