|1 tsp||(5 mL) Minced garlic|
|1 tsp||(5 mL) Chopped fresh thyme|
|1/2 tsp||(2 mL) Cayenne pepper|
|1/2 tsp||(2 mL) Salt|
|1/4 tsp||(1 mL) Pepper|
|1/2 cup||(125 mL) Milk|
|1/2 cup||(125 mL) Flour|
|1 cup||(250 mL) Ground pecans|
|1/2 cup||(125 mL) Bread crumbs|
PLACE chicken in a shallow bowl with garlic, thyme, cayenne, salt and pepper. Gently massage spices into chicken. Beat eggs and milk together in another shallow bowl. Place flour in a third shallow bowl and finally place the pecans and breadcrumbs together in a fourth shallow bowl.
HEAT ½” (1 cm) of oil in a large skillet over medium-high heat until it reaches 325°F (160°C). Lower to medium and maintain temperature.
DREDGE chicken fillets in flour, then milk and egg mixture and finally the pecan and breadcrumb mixture. Add chicken to the hot oil and cook for 3 minutes per side or until the internal temperature reaches 165°F (74°C). Drain on a paper towel. Serve with honey mustard for dipping.
