Crunchy toasted peanuts and crispy panko breadcrumbs coat thin slices of tender Prime chicken breasts.
|3/4 cup||(175 mL) Unsalted peanuts|
|3/4 cup||(175 mL) Panko breadcrumbs|
|3/4 cup||(175 mL) Flour|
|Salt and pepper|
|1 Pkg||Maple Leaf Prime Naturally® Thin Sliced Chicken Breasts|
|Vegetable oil for frying|
COMBINE peanuts and breadcrumbs in a food processor. Pulse until peanuts are a crumb consistency. Transfer to a shallow dish.
PLACE flour in a shallow dish and season with salt and pepper. Beat eggs in a separate shallow dish.
DREDGE chicken in seasoned flour, dip in egg and then peanut-breadcrumb mixture to coat.
HEAT oil, ½ inch (2 cm) deep, in a large skillet over medium heat. Place coated chicken in hot oil and shallow fry for 4-5 minutes per side or until golden brown and internal temperature reaches 165˚F (74˚C).
Serve with Asian noodle salad or slaw and your favourite dipping sauce.
