I ate these a lot as a kid.
|8||slices, thick cut bacon|
|8||slices, Dempsters bread, any kind|
Cook the bacon in a cast iron skillet over medium-low heat until quite crisp.
Drain it on paper towels, leaving 1 tbsp of fat in the pan (and reserve the rest). Cut the bacon in half crosswise.
Toast the bread in the bacon fat over medium heat (2 minutes a side until golden). Use reserved fat as needed.
Spread peanut butter on the bread to taste. Top with four pieces of bacon and drizzle with honey. Top with other piece of toast. Repeat. Serve immediately.
