This rainbow salad is high in protein and low in fat but, you don't have to tell the kids that~ Chock full of juicy, crispy, sweet and savory flavours this
This Peachy Keen salad and Nacho "spoon" will be a hit any day of the week. They won't even know that this is gluten free!
|1/4 cup||diced ML Country Kitchen ham|
|1 cup||cooked, seasoned white quinoa|
|1/2||diced, yellow peach, washed, peel on for fiber|
|2 tbsp||each diced english cucumber, red pepper, black olives,celery, mozzarella|
|1||Dressing recipe to follow|
|4 tsp||apple cider vinegar|
|2 tbsp||chopped mint|
|4||-5 Tortilla chips|
|2||-3 slices of green apple|
Mix oil, vinegar, mint and salt together.
Mix the quinoa, ham, peach, veggies and cheese together.
Pour the dressing over the mixture and toss to mix.
Squeeze 1 mandarin section over apples to prevent browning if travelling.
Serve with Nacho chips or any desired side.
