The toasted spices give the ham a pastrami flavour. Delicious with roasted spring vegetables, spring squash, asparagus, use your imagination!
|2 tbsp||(30 mL) Black peppercorns|
|2 1/2 tbsp||(40 mL) Coriander seeds|
|1 tsp||(5 mL) Chipotle powder|

PREHEAT oven to 375°F (190°C).
HEAT a small skillet over medium. Add peppercorns and coriander seeds and toast for 1-2 minutes until fragrant and beginning to pop. Grind the seeds using a spice grinder or mortar and pestle. Add the chipotle powder.
RUB the spice mixture over the entire surface of the ham. Roast ham in a shallow roasting pan for 20 minutes. Add about ¼ cup (60 mL) of water, loosely cover with foil and continue to roast for 35-40 minutes. Uncover for the last 15 minutes.
Serve ham with assorted, roasted spring vegetables and assorted mustards.
