If you are cooking this on the BBQ throw a handful of wood chips on the fire right when you start the salmon. If you are baking it in the oven add 1/4 teaspoon smoked paprika to the rub.
2 lb | Fresh Salmon Steaks |
1.5 tsp | Kosher Salt |
1.5 tsp | Ground Coriander seed |
1 tsp | Fresh Cracked Black Pepper |
1/4 tsp | Cinnamon |
1/4 tsp | Mustard Powder |
1/4 tsp | Smoked Paprika (if real smoke is not an option) |
3 tbsp | Brown Sugar |
Mix all dry ingredients well.
Distribute rub on the tops of all the salmon pieces.
Let rest in fridge for at least 1 hour - up to 3 hours.
Cook salmon on top rack of BBQ (with some wood chips) or in the oven until fully cooked.
