If you are cooking this on the BBQ throw a handful of wood chips on the fire right when you start the salmon. If you are baking it in the oven add 1/4 teaspoon smoked paprika to the rub.
|2 lb||Fresh Salmon Steaks|
|1.5 tsp||Kosher Salt|
|1.5 tsp||Ground Coriander seed|
|1 tsp||Fresh Cracked Black Pepper|
|1/4 tsp||Mustard Powder|
|1/4 tsp||Smoked Paprika (if real smoke is not an option)|
|3 tbsp||Brown Sugar|
Mix all dry ingredients well.
Distribute rub on the tops of all the salmon pieces.
Let rest in fridge for at least 1 hour - up to 3 hours.
Cook salmon on top rack of BBQ (with some wood chips) or in the oven until fully cooked.
