About this Recipe

This traditional Pasta Abruzzi features fettuccini pasta, crispy bacon and sliced sausage doused in a rich tomato and herb sauce.


.25 cup (60 mL) Olive oil
.5 Onion, minced
3 Cloves garlic, minced
1 tbsp (15 mL) Tomato paste
1 (14 oz/398 mL) Can tomato sauce
1 (8 oz/796 mL) Can whole tomatoes, crushed by hand
3 tbsp (45 mL) Chopped fresh herbs (thyme, oregano, basil)
Pinch of sugar
6 Slices Schneiders® Bacon, chopped
1 (300 g) Package Schneiders® Country Naturals® Hot & Spicy Smoked Sausage, sliced
2 Onions, sliced
3 Cloves garlic, minced
1 tsp to 2, (5-10 mL) Chili flakes
1 tbsp (15 mL) Worcestershire sauce
1 tsp (5 mL) Balsamic vinegar
1 tsp (5 mL) Brown sugar
.25 tsp (1 mL) Dried thyme
.25 tsp (1 mL) Dried oregano
.5 lb (500 g) Dry fettuccini pasta
.25 cup (60 mL) Freshly grated Parmesan cheese

HEAT olive oil in a large pan to medium-high, add onions and cook until tender 3-4 minutes. Add garlic and cook for another 1-2 minutes. Add tomato paste, tomato sauce and whole tomatoes. Stir in a pinch of sugar and the fresh herbs. Simmer for 30 minutes while you prepare the remainder of the sauce.

HEAT a large skillet and cook bacon until slightly crisp. Add sausage and cook for another 4-5 minutes. Add onions and garlic and continue to cook until onions are translucent. Stir in chili flakes, balsamic vinegar, brown sugar, dried thyme and oregano. Cook until onions are caramelized, about 10-20 minutes. Season with salt and pepper. Add the meat mixture to the marinara sauce and continue to simmer for an additional 10 to 20 minutes.

COOK pasta in boiling salted water according to the package directions. Drain well and toss pasta with sauce.

SERVE sprinkled with grated Parmesan cheese.
