Use leftover mashed potatoes, and no one will know. They're crispy, savory, and surprisingly light tasting. It is inspired by my grandma's recipe.
Pairs with Turkey and home style gravy
|3 cups||Mashed potatoes (leftovers recommended)|
|1/2 cup||Italian seasoned breadcrumbs|
|1/2 cup||shredded Parmesan cheese|
|1/4 cup||olive oil|
|2 tbsp||sour cream (garnish)|
|1/4 tsp||rosemary (optional)|
|2 tbsp||roasted garlic mashed (optional)|
Add 1/4 cup of the Italian breadcrumbs and 1/4 of the cheese to mashed potatoes and mix. The mashed garlic and rosemary can be added now as well if you choose. Add extra salt and pepper if desired.
Form into patties, using 1/4-1/2 cup amounts.
Coat each side lightly with the remaining Parmesan and breadcrumbs.
Shallow fry until golden brown and crusty on medium heat in a frying pan with the olive oil and butter mixture. Careful not to over crowd- work in smaller batches. They only need two minutes max per side.
Serve with sour cream, chopped green onions.
