This is my version of chicken parmigiana on a Villagio bun. It's delicious and very satisfying.


5 boneless chicken breasts cut in half
20 crackers
salt and pepper
garlic salt
1 large pot of fresh spinach leaves
1 jar of spaghetti sauce
10 Villagio Buns
2 cups grated cheese
2 tbsp melted butter
2 tbsp olive oil
1/4 cup parmesan cheese


Melt 2 tbsp of butter and mix with 2 tbsp of olive oil. Crumble crackers and mix with s&p, basil, parmesan cheese and garlic salt. Cut defrosted chicken breasts in half. Dip chicken in the butter mixture and then in the crackers. They are ready to cook on the BBQ. Open a jar of tomato sauce and mix with a large pot of fresh spinach. Grate cheese. When the chicken is cooked to your liking, remove and serve on Villagio buns, top with sauce and cheese. Serve and enjoy!
