Fresh halibut served over a savory warm tomato and bacon sauce is sure to impress any dinner guest.


5 Slices Schneiders® Bacon, coarsely chopped
.5 Onion, finely chopped
3 Green onions, finely chopped
1 Clove of garlic, minced
1 (14 oz/398 mL) Can diced tomatoes
.25 cup (60 mL) Chicken stock
1 tbsp (15 mL) Olive oil
4 (6 oz/125 g) Halibut fillets
2 tbsp (30 mL) Lime juice, divided
Salt and pepper
3 Cloves of garlic, minced
2 tbsp (30 mL) Butter
.25 cup (60 mL) Chopped cilantro


COOK bacon in a pan over medium heat until crispy, about 8-10 minutes. Remove all but 2 tbsp (30 mL) of fat from pan. Add onion and cook for 3 minutes. Add green onions and garlic and continue to cook for 1 minute. Add tomatoes and chicken stock. Simmer for 30 minutes, remove from heat and keep warm.

HEAT oil in a large fry pan on medium-high.

SEASON halibut with 1 tbsp (15 mL) lime juice and salt and pepper. Add to preheated pan and pan fry for 3-4 minutes per side, or until it flakes easily with a fork. Remove from pan and keep warm.

ADD garlic to pan and cook for 1 minute. Stir in butter, cilantro and remaining lime juice. SERVE bacon-tomato sauce topped with a halibut fillet and drizzled with butter cilantro sauce.
