Fresh halibut served over a savory warm tomato and bacon sauce is sure to impress any dinner guest.
|5||Slices Schneiders® Bacon, coarsely chopped|
|.5||Onion, finely chopped|
|3||Green onions, finely chopped|
|1||Clove of garlic, minced|
|1||(14 oz/398 mL) Can diced tomatoes|
|.25 cup||(60 mL) Chicken stock|
|1 tbsp||(15 mL) Olive oil|
|4||(6 oz/125 g) Halibut fillets|
|2 tbsp||(30 mL) Lime juice, divided|
|Salt and pepper|
|3||Cloves of garlic, minced|
|2 tbsp||(30 mL) Butter|
|.25 cup||(60 mL) Chopped cilantro|
COOK bacon in a pan over medium heat until crispy, about 8-10 minutes. Remove all but 2 tbsp (30 mL) of fat from pan. Add onion and cook for 3 minutes. Add green onions and garlic and continue to cook for 1 minute. Add tomatoes and chicken stock. Simmer for 30 minutes, remove from heat and keep warm.
HEAT oil in a large fry pan on medium-high.
SEASON halibut with 1 tbsp (15 mL) lime juice and salt and pepper. Add to preheated pan and pan fry for 3-4 minutes per side, or until it flakes easily with a fork. Remove from pan and keep warm.
ADD garlic to pan and cook for 1 minute. Stir in butter, cilantro and remaining lime juice. SERVE bacon-tomato sauce topped with a halibut fillet and drizzled with butter cilantro sauce.
