12 slices Schneiders® Oven Roasted Turkey
12 slices of white bread, crusts removed
4 large avocados, ripe and pit removed
1 tbsp lemon juice
1/3 cup cherry tomatoes, quartered
2 tbsp green onion or chive, minced
Paprika or Cayenne
Cooking spray


Preheat oven to 375 degrees. Lightly spray muffin pan with cooking spray. Using a rolling pin, gently flatten bread to about ½ inch thickness. Press each piece of bread into muffin pan. Bake on center rack of oven for about 10 to 15 minutes or until bread is golden brown. Check often. Allow to cool 1 to 2 minutes and remove onto cooling rack. Meanwhile, scoop out avocado flesh into a large bowl. Add lemon juice. Mash with a fork until desired consistency. Season with salt and pepper. Divide avocado mixture into each bread cup. Fold turkey and stuff into cup. Garnish with cherry tomatoes and green onions. Dust with paprika or Cayenne.


Try adding fresh cilantro to avocado for delicious added flavor.
