|1||(19 oz) Can diced tomatoes|
|1||(127 mL) Can green chillies|
|1||Onion, thinly sliced|
|1||Red pepper, sliced|
|3 tbsp||(45 mL) Vegetable oil|
|2 tsp||(10 mL) Chili powder|
|2 tsp||(10 mL) Cumin|
|1 tsp||(5 mL) Garlic powder|
|1/2 tsp||(2 mL) Dried oregano|
|Salt and pepper|
|12||Small Tortillas, warmed|
|Ready prepared salsa|
PREHEAT oven to 400°F (200°C).
LIGHTLY grease a 9x13” (3.5 L) baking dish.
MIX together tomatoes, chillies, onion and pepper.
WHISK oil and spices in a separate bowl. Drizzle over chicken pieces and vegetables.
SPREAD this mixture evenly over the bottom of the baking dish and roast, uncovered for 20-25 minutes or until the internal temperature of the chicken reaches 165°F (74°C).
SPOON the mixture on top of warm tortillas, roll up and serve with salsa and sour cream.
Add grated cheese is you desire.
