Oven Baked Huevos Rancheros with Ham and Cheese

Ingredients

1 tbsp (15 mL) Vegetable oil
1 Yellow pepper, sliced
1 Small red onion, sliced
1 Jalapeno pepper, seeded and finely diced
2 Cloves garlic, minced
2 tbsp (30 mL) Chili powder
1 lb (450 g) Schneiders® Country Naturals® Smoked Ham, diced
1 (500 mL) Jar prepared salsa
1/2 cup (125 mL) Tomato juice
4 Eggs
1/2 cup (125 mL) Grated Monterey Jack cheese
1/4 cup (60 mL) Cilantro, chopped

Directions

PREHEAT oven to 400°F (200°C).

HEAT oil in a large ovenproof skillet over medium-high. Sauté peppers, onion, jalapeno, garlic, chili powder and ham for 5-6 minutes. Add prepared salsa and tomato juice. Simmer for 3-4 minutes. Remove from heat and let cool slightly. Make four small wells in the mixture using a ladle. Crack the eggs, one at a time into a small bowl and carefully pour into each of the wells. Sprinkle with grated cheese and bake in preheated oven for 7-8 minutes or until egg whites are set and the yolk is still soft. Remove from the oven and sprinkle with cilantro.

Notes

Garnish with avocado and serve with tortillas for dipping.
