Try this for breakfast instead of the usual! Easy and delicious!
|1 tbsp||(15 mL) Vegetable oil|
|1||Yellow pepper, sliced|
|1||Small red onion, sliced|
|1||Jalapeno pepper, seeded and finely diced|
|2||Cloves garlic, minced|
|2 tbsp||(30 mL) Chili powder|
|1 lb||(450 g) Schneiders® Country Naturals® Smoked Ham, diced|
|1||(500 mL) Jar prepared salsa|
|1/2 cup||(125 mL) Tomato juice|
|1/2 cup||(125 mL) Grated Monterey Jack cheese|
|1/4 cup||(60 mL) Cilantro, chopped|
PREHEAT oven to 400°F (200°C).
HEAT oil in a large ovenproof skillet over medium-high. Sauté peppers, onion, jalapeno, garlic, chili powder and ham for 5-6 minutes. Add prepared salsa and tomato juice. Simmer for 3-4 minutes. Remove from heat and let cool slightly. Make four small wells in the mixture using a ladle. Crack the eggs, one at a time into a small bowl and carefully pour into each of the wells. Sprinkle with grated cheese and bake in preheated oven for 7-8 minutes or until egg whites are set and the yolk is still soft. Remove from the oven and sprinkle with cilantro.
Garnish with avocado and serve with tortillas for dipping.
