About this Recipe

Yummy salad that can be made into a main with the addition of grilled salmon or chicken

Ingredients

1 cup oven roasted organic local beets (combination of golden and red if you can get them)
1 bunch organic baby arugula
a generous amount of shaved fresh parmesan cheese
.5 cup cooked red lentils
1 tbsp Fig flavoured white balsamic vinegar
4 tbsp Quality EVOO
.5 tsp minced garlic
1 tsp finely chopped rosemary
.5 tsp freshly squeezed lemon juice

Directions

on a large salad plate or decorative bowl layer in the arugula, top with beets, lentils and parmesan cheese.

Mix all remaining ingredients in a bowl and whisk together, pour over salad the desired amount
