|1 tbsp||(15 mL) Flour|
|(15 mL) Flour|
|2 tbsp||(30 mL) Vegetable oil|
|1||Onion, finely chopped|
|1||Red apple, cored and diced|
|1||Pear, cored and diced|
|1/4 cup||(60 mL) Apple jelly|
|1||Lemon, zested and juiced|
|1||Orange, zested and juiced|
|1 tsp||(5 mL) Ground ginger (or 1 tbsp (15 mL) fresh grated gingerroot)|
|1 tbsp||(15 mL) Butter|
TOSS chicken thighs with flour, salt and pepper to coat. Heat oil in a large skillet over medium-high. Add the chicken and cook 2-3 minutes per side or until golden brown. Remove from the pan and set aside.
ADD all of the remaining ingredients except the butter to the pan. Sauté, stirring occasionally for 2-3 minutes. Season with salt and pepper. Return chicken to the pan and simmer, covered for 8-10 minutes or until the chicken is cooked to an internal temperature of 165°F (74°C). Add the butter just before serving with your favourite side dish.
