About this Recipe

I enjoyed sandwiches similar to this at a picnic several years ago. I've done my best to recreate this delicious and healthy recipe. The tangy orange BBQ sauce brings out the best in the Maple Leaf Natural Selections Oven Roasted Chicken Breast slices. Combined with crunch of the toasted Dempsters WholeGrains bread, your family is sure to enjoy this recipe.

4 Dempsters WholeGrains bread
4 Maple Leaf Natural Selections Chicken Breast slices
1/2 cup orange marmalade
1 tbsp soy sauce
8 fresh asparagus spears
1 tbsp sesame oil
1/2 garlic clove, crushed
1/2 tbsp soy sauce
1 tbsp sesame seeds

For the Orange BBQ Sauce:

In a medium-size microwave-safe bowl, stir marmalade with soy sauce. Microwave, uncovered, on high until softened, 1 minute.

For the Asparagus:

Cut the asparagus spears, size to fit on bread. In a small bowl, combine the sesame oil, soy sauce, garlic and sesame seeds and stir with a fork to mix. Brush this mixture on the asparagus Season the asparagus with a little salt and pepper.

Grill the asparagus in a griddle pan for 4-5 mins per side, turning with tongs. Sprinkle with sesame mix as they grill.

Create the Sandwich:

Toast Dempsters WholeGrains Bread. Spread orange BBQ sauce on bread. Top with Maple Leaf Natural Selection Oven Roasted Chicken Breast slices and asparagus spears.

If this recipe is prepared hours in advance of your picnic, pack chicken slices and grilled asparagus spears in separate containers. After toasting the bread, spread the sauce on the toast and wrap separately. Assemble the sandwich at the picnic site.
