Really quick easy and delicious
|3||Schneiders chicken sausages|
|1||yellow onion, chopped|
|3||cloves of garlic, minced|
|2||tomatoes, peeled seeded chopped|
|2 cups||white rice|
Remove sausage casing and crumble into a large nonstick skillet coated with cooking spray. Add zucchini and onion; cook and stir over medium heat until meat is no longer pink approx 7-10 mins. Meanwhile add two cups of white rice to rice cooker and add 2 cups of water or as directed for specific grain. Add garlic; cook 1 minute longer.
Stir in tomatoes and pepper; bring to a boil. Reduce heat; simmer, uncovered, for 4-5 minutes or until liquid is evaporated. Serve with rice. Yield: 4 servings.
