|1||Lemon, zested and juiced|
|1 tsp||(5 mL) Paprika|
|1 tsp||(5 mL) Dried thyme|
|1 tbsp||(15 mL) Vegetable oil|
|1||Onion, finely chopped|
|2||Cloves garlic, minced|
|2||Medium carrots, sliced on the bias|
|1 cup||(250 mL) White rice|
|2 cups||(500 ml) Chicken broth|
|2 tbsp||(30 mL) Chopped parsley|
MIX drumsticks with lemon juice, lemon zest, paprika and thyme. Toss to coat.
HEAT oil in a large non-stick skillet over medium-low. Add drumsticks and cook, turning frequently until evenly browned on all sides, about 10 minutes. Add onion and garlic along with any extra marinade. Cook until onion is soft and fragrant. Add carrots and rice. Cook for 2-3 minutes. Add broth and bring mixture to a boil; reduce heat and simmer, covered over medium-low heat for 25-30 minutes or until rice is tender and the internal temperature of the chicken has reached 185°F (85°C). Stir occasionally during cooking, season with salt and pepper to taste. Sprinkle with parsley.
Serve with a fresh green salad.
