This meal is very simple and flavorful. It's all cooked in one pot, so there's not too many dishes to do.


4 Maple Leaf Prime chicken thighs
.5 cup flour
1 tsp salt
1 tsp black pepper
2 tbsp vegetable oil
1 onion- chopped
.5 green pepper- chopped
.5 red pepper -chopped
6 white mushrooms -sliced
2 cloves garlic-minced
.75 cup chicken broth
.25 cup white wine
1 tbsp fresh parsley-chopped
2 Bay leaves
2 tsp Oregano
1 tsp salt
1 tsp black pepper


In a large freezer bag, add flour and salt and pepper. Seal and shake to mix. Add 4 chicken thighs, shake until they are all coated with flour mix. Take out bag and shake off excess. Heat up large pot with 2 Tbsp oil, add chicken thighs and cook until golden brown on both sides. Take out of pot and set aside. To the same pot add onions, garlic, peppers and mushrooms, cook until soft. Add the can of crushed tomatoes, chicken stock, wine, Bay leaves, Oregano, salt and pepper and parsley. Stir to combine and simmer for 10 minutes, Stirring occasionally. Add chicken thighs back to the pot. Stir to combine. Cook for at least 30 minutes on medium. Remove 2 Bay leaves and toss away. Serve the Chicken Caccitora on a bed of Pasta noodles with bread to soak up the yummy sauce. Enjoy!
