Grilled cheese, but surprisingly healthy this time! Filled with yummy bacon, veggies, and cheese!
|4||Slices Maple Leaf® Natural Selections® Bacon, cut into 2” (5 cm) pieces|
|1||Shallot, thinly sliced|
|6||Brussels sprouts, thinly sliced|
|1/2 tsp||(2 mL) Lemon zest|
|Salt and pepper|
|Pinch of nutmeg|
|6 oz||Sliced Oka cheese|
|4||Slices Villaggio® Original Thick Sliced Italian Style White Bread|
|2 tbsp||(30 mL) Softened butter|
COOK bacon in a large skillet over medium heat until crisp, about 5-6 minutes. Remove from pan with a slotted spoon and drain on a paper towel. Discard all but 1 tbsp (15 mL) of the bacon drippings from the pan. Heat over medium-high heat and add shallots and Brussels sprouts. Season with salt, pepper, nutmeg and zest. Sauté, stirring occasionally for 2-3 minutes. Remove from heat and set aside.
ASSEMBLE sandwiches by placing one quarter of the cheese on two slices on bread. Divide bacon between the bread, top with Brussels sprouts mixture, remaining cheese and bread. Butter the outside of the sandwiches. Place in skillet and grill over medium-high heat for about 2-3 minutes on each side until golden and crispy and cheese has melted.
