Ingredients

1/2 cup (125 mL) Baby spinach leaves
2 Dempster’s® Spinach Tortillas
1 (170g) Can tuna, drained
1 Hard boiled egg, sliced
1 Medium tomato, diced
1/4 Small red onion, thinly sliced
1 tbsp (15 mL) Dijon mustard
1 tsp (5 mL) Mayonnaise
Salt and pepper

Directions

DIVIDE spinach between tortillas.

LIGHTLY toss tuna with sliced egg, tomato, red onion, mustard and mayonnaise. Season with salt and pepper.

TOP spinach with tuna mixture, fold up one edge and roll up to serve.

Notes

Add ¼ cup (60 mL) chopped black olives to filling mixture.
