|3 cups||(750 mL) Green leaf lettuce, torn|
|1 cup||(250 mL) Green beans, blanched|
|3/4 cup||(175 mL) Grape tomatoes, halved|
|1/2 cup||(125 mL) Nicoise or Kalamata olives|
|2||(170 g) Cans chunk light tuna, drained|
|4||Hard-boiled eggs, quartered|
|3-4 tbsp||(45-60 mL) Extra virgin olive oil|
|Salt and pepper|

PLACE lettuce in a bowl with beans, tomatoes and olives. Gently break the tuna into small chunks and add to the bowl along with hard-boiled eggs. Drizzle with lemon juice and olive oil. Season with salt and pepper. Gently toss.
