I love using leftovers to make a quick meal. I had these sautéed mushrooms and onions leftover. You can sauté fresh mushrooms and onions in butter if you don't have leftovers.

Ingredients

1 Dempsters English muffin
1 egg
2 slices cheddar cheese
2 tbsp butter
3 tbsp leftover sauteed mushroom and onions

Directions

Toast and butter English muffin. Coat inside of a small glass dish with cooking spray, and scramble an egg in it with 1 tbsp. of water. Microwave for about 1 min. In a separate dish in microwave reheat mushrooms. Turn egg out of dish onto English muffin and add the cheese and mushrooms.
