Turkey is marinated in Moroccan spices to create a simple tender sweet and spicy turkey dinner.


1 Package Maple Leaf Prime® Turkey Scaloppini
1 Red chili, seeded and finely chopped
.5 tsp (2 mL) Dried chili flakes
2 Cloves of garlic, minced
1 tbsp (15 mL) Lemon juice
2 tsp (10 mL) Ground cinnamon
2 tsp (10 mL) Ground cumin
.25 cup (60 mL) Olive oil
Salt and pepper
.5 cup (125 mL) Chicken stock
.25 cup (60 mL) Raisins or currants
.25 cup (60 mL) Pine nuts or slivered almonds, toasted
2 tbsp (30 mL) Chopped fresh mint
1 Large navel orange, sliced in circles


PLACE turkey in a large re-sealable plastic bag.

MIX together red chili, chili flakes, garlic, lemon juice, cinnamon, cumin, olive oil, salt and pepper Pour over turkey, seal bag and refrigerate for 30 minutes.

HEAT a large skillet over medium heat. Remove turkey from bag, place in skillet and discard any remaining marinade. Cook for 3-4 minutes on each side, or until turkey has reached an internal temperature of 174°F (65°C). Add chicken stock, raisins, pine nuts, mint and orange slices and heat for 1 minute.

SERVE turkey topped with oranges and sauce.
