Fresh and light, with flavours that will wake you up.
If you prefer, substitute a fried or poached egg for hard boiled.

Pile it high for energy all morning!


1 hard boiled egg
1 English Muffin
Parmesean cheese shavings to taste
a handful of fresh arugula
a few fresh basil leaves
1 1/2 tbsp of jarred bruschetta or more to taste
a few basil leaves
a squeeze of lemon


In a small bowl, mix the arugula with ripped up pieces of basil. Drizzle olive oil and sprinkle salt to taste. Squeeze just of lemon approximately 1 tsp. Mix and set aside.

Cut the hard boiled egg into six slices.

Toast English Muffin

Once English muffin is toasted, heap the arugula basil mixture on both halves.

Next, sprinkle on the fresh parmesan shavings
Layer three slices of hard boiled egg on each half.

Spoon on the jarred bruschetta of your choice on each half. (I used a roasted red pepper and artichoke version.)

Enjoy the sandwich open-faced or assemble as above for a deliciously yummy, but messy breakfast!
