This muffaletta style sandwich is a perfect blend of zesty spice and the grilled flavour of Ontario vegetables.
|2 Pkg||Maple Leaf® Canadian CraftTM Montreal Steak Spice Capicollo|
|1||12 inch baguette, sliced in half lengthwise|
|1 1/2 cup||(375 mL)mayonnaise|
|1/4 tbsp||(3.75 mL)fresh cracked black pepper|
|1||large red pepper|
|1||large yellow pepper|
|1||large orange pepper|
|1||large red onion, sliced into rounds|
|2||cloves garlic, sliced thin|
|1 tbsp||(30 mL)olive oil|
Preheat grill to medium high heat.
Roast peppers turning often for about 6 to 8 minutes or until skin is charred and blistered.
Allow to cool slightly.
Meanwhile grill onion for 2 to 3 minutes per side.
Peel skin from cooled peppers and remove seeds and veins.
Chop into strips.
Put all the vegetables in a small bowl with garlic, olive oil and season with salt and pepper.
Mix mayonnaise with pepper in a bowl.
Assemble sandwich by spreading bottom of bread with mayonnaise mixture followed by layering slices of meat, cheese and vegetables and top of French loaf.
Tightly roll sandwich in plastic wrap and refrigerate for 45 minutes to an hour or overnight.
Unwrap, sliced into 4 sandwiches and serve.
Great as a make ahead sandwich for a picnic or luncheon.
