This easy MMM"egg"a Muffins can be made in minutes with the help of prepared crescent rolls. Ham and fluffy eggs are surrounded by tasty vegetables making this crowd pleaser great for Brunch, snack or handy for transporting.
|1||tube with 8 crescents, unwrapped,|
|1||seeded and chopped red pepper|
|1||peeled and chopped onion|
|1 cup||frozen or 2 cups fresh spinach, chopped|
|1/4 cup||35% cream|
|1/4 cup||chopped Maple Leaf Smoked Black Forest Ham or Chicken Deli|
|1/4 cup||small cubes of cheddar or desired cheese|
|2||sliced cremini mushrooms or button|
In a small skillet add oil and onions.
Cook for 1 min to soften slightly.
Add the remaining vegetables, salt and herb.
Cook on medium heat for 3-5minutes to soften. Turn off and cool slightly.
Separate the two sections of crescents (4 on each section).
Press seams together. Cut each section evenly in half, making 8 squares.
Press each square into muffin tins. Pressing seams closed and forming up the sides.
Divide the filling and place on bottom of each cup.
Tuck in the ham/chicken deli and cheese.
Whisk eggs and cream together.
Spoon over vegetables.
Bake in a preheated 350F for 15-20 minutes or until desired doneness of your eggs.
*Any combination of vegetables can be added, use your imagination or what is available in your home.*
*Dairy can be omitted and unsweetened soy or nut beverages can be substituted for cream*
