A colourful side that paired nicely with broccoli and cheese stuffed Prime glazed chicken.

Ingredients

4 cups frozen carrots and mixed beans
1 onion-diced
1/2 red or orange pepper diced
2 slices baccon

Directions

Cook bacon in a skillet. Remove from pan and cut into small pieces. In the same skillet add the onions and cook on medium until edges start to clear. Add peppers and frozen vegetables. Combine well and cover with a lid. Cook on medium stirring occasionally, until vegetables are heated throughout and brightly coloured (about 10 min). Stir in chopped bacon.

Notes

The easiest way to cut up bacon is right after it is cooked using kitchen scissors.
