About this Recipe

This Sub may be Mini but it sure will be filling and hearty with Chicken Meatballs smothered in Tomato Sauce. Toasting the bread will help keep this Sub crispy and crunchy outside for lunchtime.

Ingredients

2 Schneiders Chipotle Chicken meatballs warmed through according to pkg directions
4 tbsp. tomato sauce preferably homemade
1 small crusty bun split in half lengthwise and toasted
1 lettuce leaf torn
3 grape tomatoes
5 carrot shaving
3 mini bocconcini cheese
1 tbsp. prepared dressing of your choice

Directions

Spoon 1/2 of the tomato sauce on the bottom of the bun.
Top with meatballs, remaining sauce.
Sandwich the two pieces together.
Place lettuce items in a separate compartment and place dressing in a spill proof container.

Notes

Children coming home for lunch can have this popped into a microwave for 30 sec. or a toaster oven for 15 min.
