These personal meatloaves make a wholesome weeknight dinner for the family. Serve any leftovers as sliders later in the week.

|2||Cloves garlic, minced|
|1||Small onion, finely diced|
|1/4 cup||(60 mL) Finely grated Romano cheese|
|1/2 cup||(125 mL) Dried Italian style breadcrumbs|
|3 tbsp||(45 mL) Chopped fresh parsley|
|Salt and pepper|
|1 cup||(250 mL) Ready prepared marinara sauce|
|1/2 cup||(125 mL) Grated Mozzarella cheese|
PREHEAT oven to 350 ˚F (180˚C). Lightly coat 9 muffin cups with non-stick cooking spray.
COMBINE the first nine ingredients in a large mixing bowl. Using your hand, gently mix together. Wet your hands slightly to prevent sticking. Divide mixture into 9 muffin cups.
BAKE in a preheated oven for 10 minutes. Top each loaf with marinara sauce and Mozzarella cheese. Bake an additional 10-15 minutes or until the internal temperature has reached 165˚F (74˚C).
Serve with mashed potatoes and buttered green peas.
