Yummy chicken drumsticks accompanied by a crunchy salad.

Ingredients

GRILLED CHICKEN:
2 Cloves garlic
Pinch salt
3 tbsp (45 mL) Lemon juice
1 tbsp (15 mL) Olive oil
1 tsp (5 mL) Cinnamon
Pinch cayenne
1 tsp (5 mL) Paprika
1/4 tsp (1 mL) Black pepper
1 Pkg (5 pieces) Maple Leaf® Prime® Naturally Chicken Drumsticks
PITA CRUNCH SALAD:
1/2 English cucumber, chopped
1/2 Small sweet onion
1/2 cup (125 mL) Cherry tomatoes, halved
4-5 cups (1 – 1.25 L) Torn Romaine lettuce
1/4 cup (60 mL) Coarsely chopped fresh parsley
1/4 cup (60 mL) Coarsely chopped fresh mint
1 Pkg Dempster’s® Pita Pockets, toasted and broken into bite-size pieces
1 Clove garlic, minced
Salt and pepper
2 tbsp (30 mL) Lemon juice
1/4 cup (60 mL) Olive oil

Directions

Grilled Chicken
WHISK together, garlic, salt, lemon juice, olive oil, cinnamon, cayenne, paprika and black pepper. Place chicken in a re-sealable plastic bag and pour mixture over chicken, marinade for at least 30 minutes or up to 4 hours.

PREHEAT BBQ to medium-high. Spray grill with non-stick cooking spray. Grill chicken for 20-25 minutes, turning frequently until evenly charred and internal temperature reaches 185°F (85°C). Remove from grill and set aside. Discard any leftover marinade in bag.

Pita Crunch Salad
TOSS together cucumber, onion, tomatoes, lettuce, parsley, mint and pita pieces in a large salad bowl. Whisk together the remaining ingredients and drizzle over salad just before serving with chicken.

Notes

Garnish the drumsticks and salad with lemon wedges.
