Ingredients

1/4 tsp (1 mL) Vegetable oil
1 Egg
1 Dempster’s® English Muffin, split and toasted
1 tbsp (15 mL) Mashed avocado or ready prepared guacamole
1 tbsp (15 mL) Grated Cheddar cheese
1 tbsp (15 mL) Salsa

Directions

LIGHTLY grease a small bowl or ramekin with oil. Crack the egg into the bowl. Season with salt and pepper. Microwave on high for 1 minute.

SPREAD one half of the English muffin with avocado or guacamole. Top with cooked egg, Cheddar cheese, salsa and remaining English muffin half.
