Sometimes you want a filling meal that can be put together quickly. If you ever have leftover ground chicken or turkey, look no further. This Mexican Lasagna is insanely delicious and you really can’t go wrong when combining ground chicken, refried beans and cheese. 


8 Small tortillas
3/4 Jar of your favorite salsa
6 Slices sharp cheddar cheese
1 Can refrained beans
1 cup Leftover ground chicken


Preheat oven to 350 degrees. Grease a small 8x8 casserole dish.  Spoon 1/4 of salsa on the bottom. Slice 4 tortillas in half and arrange them into the dish, covering the entire bottom without overlapping.
Scoop out and evenly spread 1/2 the can of refried beans on top of the tortillas. Top with 1/4 can salsa. Cover beans and salsa with the 4 remaining tortillas.
Repeat for the second layer (save some salsa for the top).  Lay the cheese on top so the dish is completely covered.
Bake for 15 minutes and then broil on low until the cheese is melted and bubbly.
Slice into quarters and serve.
