This classic Mexican dish will have the whole family excited about dinner! Infused with an array of traditional Mexican spices, these Chicken Burritos are a delight to the senses.
|MEXICAN SPICE BLEND:|
|1 tbsp||(15 mL) Paprika|
|2 tsp||(10 mL) Cumin|
|2 tsp||(10 mL) Chili powder|
|1 tsp||(5 mL) Oregano|
|½ tsp||(2 mL) Coriander|
|¼ tsp||(1 mL) Cayenne|
|Salt and pepper|
|1 tbsp||(15 mL) Vegetable oil|
|1||Small onion, diced|
|2||Cloves garlic, minced|
|1 lb||(454 g) Maple Leaf Prime Naturally® Extra Lean Ground Chicken|
|1/2 cup||(125 mL) Chicken broth or water|
|1 tbsp||(15 mL) Lime juice|
|1 cup||(250 mL) Drained canned black beans|
|1 cup||(250 mL) Frozen corn|
|1 cup||(250 mL) Cooked rice|
|6||Dempster’s® Original Large Tortillas|
|1||Large tomato, diced|
|Shredded Cheddar cheese, optional|
COMBINE all ingredients for Mexican spice blend in a small bowl and set aside.
HEAT oil in a large skillet over medium-high heat. Add onion and garlic. Sauté for 2-3 minutes or until fragrant and soft. Add chicken and cook, breaking up with the back of a wooden spoon, for 10-12 minutes or until nicely browned. Stir in Mexican spice blend to coat the meat. Add chicken broth, lime juice, black beans, corn and rice. Cook until the liquid has absorbed, about 2-3 minutes.
DIVIDE chicken mixture between tortillas. Top with tomato, avocado, lettuce and cheese. Roll up the burritos folding in the ends as you roll to enclose. Cut in half and serve with salsa and sour cream.
