1 Package Maple Leaf Prime Naturally® Chicken Drumsticks
1 tbsp (15 mL) Vegetable oil
1 Onion, chopped
1 Orange pepper, chopped
2 Cloves garlic, minced
1 cup (250 mL) Salsa
1/4 cup (60 mL) Chopped jalapeno peppers
1 cup (250 mL) Chicken broth
1/2 cup (125 mL) Frozen corn
1 cup (250 mL) Black beans


HEAT oil in a large skillet. Add chicken and cook for 2 minutes per side or until golden brown all over. Remove from the pan and set aside.

ADD onion, peppers and garlic to the pan and cook for 4-5 minutes or until the onions are soft. Stir in salsa, jalapeno pepper, chicken broth, corn, and black beans. Nestle the chicken into the pan. Bring to a boil then reduce heat to simmer and cook, covered for 25-30 minutes or until cooked through and the internal temperature of the chicken reaches 185°F (85°C).

SERVE over rice. Sprinkle with cilantro if desired.
