Taste the Mediterranean in this loaded grilled cheese. Packed with flavor, oven roasted grilled chicken and cheese, this will become a fast favorite.
|1 Pkg||(175 g) Maple Leaf Natural Selections Hickory Smoked Chicken|
|8||slices rustic style country bread|
|4||slices grilled eggplant|
|4||slices grilled zucchini|
|4||slices grilled red pepper|
|1/2 cup||(125 mL) sundried tomatoes, diced|
|8||slices provolone cheese|
|4 tbsp||(60 mL) butter|
|2 tbsp||(30 mL) olive oil|
Assemble sandwiches by layering each bottom slice of bread with two slices of provolone.
Layer vegetables followed by chicken and top with remaining two slices of provolone and top slice of bread.
Heat butter and oil in a large skillet over medium high heat.
Fry each sandwich 2 to 3 minutes per side or until cheese has melted and bread is golden brown.
Serve with a side greek salad
