this recipe has a lots of ingredients but it is worth it .once you make it you will always remember how great and wholesome. you can eat it cold or warm with good quality grain bread if you like..enjoy


3 maple Leaf Prime Naturally Boneless Skinless Chicken Breast
1 larg eggplant cubed
2 cup tomato sauce
1 tsp sea salt
2 tbsp plain yogurt
1/2 cup pine nuts,roasted
1/4 cup olive oil
1/2 tsp chili powder
3 garlic cloves,crushed
1/2 cup water
1/2 cup cilantro, chopped
1/2 cup cooking oil for frying


marinade chicken with olive oil,half of the salt and half of the chili powder.set aside. fry eggplant until golden brown,squeeze excess oil sprinkle with the rest of the sea salt and chili. in the same pan, fry garlic with chicken and cover and cook until is tender.add eggplant and cook for 5 min.add water yogurt and cook for another 10 min.add the tomato sauce and leave it in low heat for 15 min.garnish with cilantro and pine nut...
