1.5 cups | Maple Leaf® Natural Selections® Slow Roasted Shredded Chicken |
1 | 360 gram focaccia flat bread |
2 tbsp | Good quality Olive Oil |
1/4 | Red Onion, thinly sliced |
1/2 cup | Kalamata olives, pitted and sliced |
3/4 cup | Cherry tomatoes, halved |
1/2 cup | Red pepper, thinly sliced |
1 cup | Parmesan cheese, shredded |
1/3 cup | Baby arugula |
1 tbsp | assorted chopped herbs (rosemary. thyme, parsley) |
Sea Salt to taste |
Preheat oven to 425 degrees.
Brush Focaccia bread with olive oil.
Sprinkle cheese over top.
Arrange chicken, onion, olives, tomatoes and peppers over top.
Place flat bread onto a parchment lined baking sheet and bake on middle rack in oven for 18 minutes.
Allow to cool slightly, 2 to 3 minutes.
Garnish with arugula and sprinkle with sea salt.
For a crispier crust bake directly on oven rack checking after 13 minutes for desired doneness.
Chef's Tip: Drizzle with extra olive oil if desired, sprinkle herbs over top if using.
