1.5 cups Maple Leaf® Natural Selections® Slow Roasted Shredded Chicken
1 360 gram focaccia flat bread
2 tbsp Good quality Olive Oil
1/4 Red Onion, thinly sliced
1/2 cup Kalamata olives, pitted and sliced
3/4 cup Cherry tomatoes, halved
1/2 cup Red pepper, thinly sliced
1 cup Parmesan cheese, shredded
1/3 cup Baby arugula
1 tbsp assorted chopped herbs (rosemary. thyme, parsley)
Sea Salt to taste


Preheat oven to 425 degrees.
Brush Focaccia bread with olive oil.
Sprinkle cheese over top.
Arrange chicken, onion, olives, tomatoes and peppers over top.
Place flat bread onto a parchment lined baking sheet and bake on middle rack in oven for 18 minutes.
Allow to cool slightly, 2 to 3 minutes.
Garnish with arugula and sprinkle with sea salt.
For a crispier crust bake directly on oven rack checking after 13 minutes for desired doneness.


Chef's Tip: Drizzle with extra olive oil if desired, sprinkle herbs over top if using.
