|1.5 cups||Maple Leaf® Natural Selections® Slow Roasted Shredded Chicken|
|1||360 gram focaccia flat bread|
|2 tbsp||Good quality Olive Oil|
|1/4||Red Onion, thinly sliced|
|1/2 cup||Kalamata olives, pitted and sliced|
|3/4 cup||Cherry tomatoes, halved|
|1/2 cup||Red pepper, thinly sliced|
|1 cup||Parmesan cheese, shredded|
|1/3 cup||Baby arugula|
|1 tbsp||assorted chopped herbs (rosemary. thyme, parsley)|
|Sea Salt to taste|
Preheat oven to 425 degrees.
Brush Focaccia bread with olive oil.
Sprinkle cheese over top.
Arrange chicken, onion, olives, tomatoes and peppers over top.
Place flat bread onto a parchment lined baking sheet and bake on middle rack in oven for 18 minutes.
Allow to cool slightly, 2 to 3 minutes.
Garnish with arugula and sprinkle with sea salt.
For a crispier crust bake directly on oven rack checking after 13 minutes for desired doneness.
Chef's Tip: Drizzle with extra olive oil if desired, sprinkle herbs over top if using.
