This delicious sandwich is perfect for a picnic. Not only will it leave you feeling content, it is fresh, healthy and tasty.
|2||Slices Dempster's Whole Grains Ancient Grains Bread with Quinoa|
|2 tsp||extra virgin olive oil-for top piece of bread|
|1/3 cup||red pepper-sliced|
|1 tbsp||olive oil-for red pepper|
|1||pinch salt-for red pepper|
|1||pinch black pepper-for red pepper|
|6||thin slices cucumber|
|1 bunch||fresh Arugula lettuce leaves|
Use a mandolin if you have one and slice the cucumber in 3 inch slices. Slice red pepper in thin strips. Heat up a saute pan, add olive oil, red peppers salt and pepper. Cook on low-medium for 4-5 minutes, until red peppers become soft, stirring frequently. Make your sandwich. 1 piece bread, hummus, cucumber slices, red pepper slices, Arugula lettuce, top piece of bread with extra virgin olive oil brushed on the under side. Enjoy!
On a true Mediterranean sandwich butter is not used, olive oil it is.
