This recipe is an amazing side dish that can be paired with one of the Maple Leaf Prime Fully Cooked Entree's.


225 g Quinoa
1 tbsp Coconut oil
1/2 cup Diced Onion
1/2 cup Diced Carrot
1/2 cup Diced Red Pepper
1/2 cup Diced Zucchini
1/4 cup Crumbled Feta Cheese
3 tbsp Balsamic Vinegar
2 tbsp Fresh Parsley


Boil 2 cups of water. Once boiling, add quinoa, cover, reduce heat to low and simmer covered for 15 minutes. Once it is done, remove from heat.

In a Wok pan, over medium high heat, melt coconut oil and then add onions, carrots, red pepper, zucchini until they soften, about 10 minutes. Stir in quinoa and let stand until cools. Once cool add balsamic vinegar and crumbled feta and mix well. Sprinkle with parsley and serve!
