|45 ml||Vegetable oil, divided|
|2-3||Cloves garlic, coarsely chopped|
|1||Medium zucchini, thinly sliced|
|1||Small eggplant, thinly sliced|
|1||Red pepper, sliced|
|1||Red onion, cut into eighths|
|75 ml||Prepared oil and vinegar dressing|
|75 ml||Crumbled feta cheese|
|30 ml||Italian parsley, coarsely chopped|
|Salt and pepper to taste|
HEAT 2 tbsp (30 mL) oil in a large non stick skillet over medium heat. Cook the chicken for 5 10 minutes. Meanwhile, toss the vegetables in the remaining oil and place on a large baking sheet. Place on the top rack under broiler and broil for 15 20 minutes, turning once or twice until the vegetables are lightly charred.
TURN and continue cooking chicken for 3 minutes until lightly browned. Add the garlic and reduce heat to medium low, continuing to cook for 4 5 more minutes or until the garlic is golden brown and the chicken has reached an internal temperature of 170°F (77°C).
TRANSFER chicken to a plate; tent with foil to rest for at least 3 minutes.
REMOVE vegetables from broiler and toss with dressing.
TRANSFER the cooked chicken and vegetables onto a large serving dish. Sprinkle with the feta cheese, parsley, salt and pepper.
