|2 tbsp||(30 mL) Olive oil, divided|
|3||Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts, cut into bite-size pieces|
|1||Red onion, chopped|
|4||Cloves garlic, minced|
|1||Small eggplant, cut into 1 inch (2.5 cm cubes)|
|1||Zucchini, cut into 1 inch (2.5 cm cubes)|
|1||Yellow pepper, coarsely chopped|
|1||Red pepper, coarsely chopped|
|1 1/2 cups||(325 mL) Tomato sauce or purée|
|1 tsp||(5 mL) Sugar|
|1 tsp||Italian seasoning|
|Salt and pepper|
|Fresh chopped basil|
|Freshly grated Parmesan cheese|
HEAT 1 tbsp (15 mL) oil in a large sauté pan. Add chicken and cook 8-10 minutes or until golden brown. Remove from the pan and set aside.
HEAT remaining oil in the same pan. Add vegetables and cook stirring constantly for 7-8 minutes or until tender. Place chicken back in the pan and pour in tomato sauce. Add sugar, Italian seasoning, salt and pepper. Stir to combine. Simmer over low heat for 2-3 minutes.
SERVE sprinkled with basil and Parmesan cheese.
