This vibrant dish is brimming with vegetables and tender morsels of juicy chicken. Seasoned to perfection and topped with freshly grated Parmesan cheese.


2 tbsp (30 mL) Olive oil, divided
3 Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts, cut into bite-size pieces
1 Red onion, chopped
4 Cloves garlic, minced
1 Small eggplant, cut into 1 inch (2.5 cm cubes)
1 Zucchini, cut into 1 inch (2.5 cm cubes)
1 Yellow pepper, coarsely chopped
1 Red pepper, coarsely chopped
1 1/2 cups (325 mL) Tomato sauce or purée
1 tsp (5 mL) Sugar
1 tsp Italian seasoning
Salt and pepper
Fresh chopped basil
Freshly grated Parmesan cheese


HEAT 1 tbsp (15 mL) oil in a large sauté pan. Add chicken and cook 8-10 minutes or until golden brown. Remove from the pan and set aside.

HEAT remaining oil in the same pan. Add vegetables and cook stirring constantly for 7-8 minutes or until tender. Place chicken back in the pan and pour in tomato sauce. Add sugar, Italian seasoning, salt and pepper. Stir to combine. Simmer over low heat for 2-3 minutes.

SERVE sprinkled with basil and Parmesan cheese.
