|1||Head of garlic, halved crosswise|
|2||Sprigs of thyme|
|2||Sprigs of rosemary|
|2 tbsp||(30 mL) Softened butter|
|1 tsp||(5 mL) Smoked paprika|
|1/2 cup||(125 mL) Lemon juice|
|Salt and pepper|
POSITION the rack in the upper third of the oven and preheat to 400°F (200°C).
PLACE the chicken breast side down in a medium-roasting pan fitted with a rack insert. Insert the lemon and garlic halves into the cavity of the chicken along with the thyme and rosemary. Mix the butter with the smoked paprika and rub over the entire chicken. Drizzle with lemon juice and season with salt and pepper.
PLACE the chicken in the preheated oven and reduce the temperature to 350°F (180°C). Roast uncovered for 30 minutes. Turn the chicken breast side up and continue to roast for another hour or until the juices run clear and the internal temperature reaches 185°F (85°C). Allow the chicken to rest for 10-15 minutes prior to carving. Pour the pan juices over the sliced chicken before serving.
For a side dish add – ½ lb (225 g) of new potatoes halved, 3-4 carrots, and 1-2 quartered onions to the pan after the first half hour of cooking.
