This unique and charming recipe offers a complete holiday meal for two.
6 | slices Schneiders® Bacon , diced |
1 | stalk celery, diced |
1/2 | onion, diced |
1/2 cup | crushed saltine crakers |
1 120 g | box instant stuffing mix |
3/4 cup | cranberry sauce |
1 1/2 cup | mashed potatoes, prepared and warmed |
1 cup | gravy, warmed |
1/2 tbsp | fresh rosemary, minced |
2 | medium mason jars |
Prepare boxed stuffing per package directions and set aside and keep warm. Heat a large skillet over medium high heat and cook bacon for 3 to 4 minutes or until bacon is starting to render. Add in onion, celery and cook for about 5 minutes until bacon is crisping and vegetables are softening. Add in saltines and stir well to incorporate.
Add mixture to a large bowl. Add in prepared stuffing and using your hand mix to incorporate. If mixture is to dry add a little water, chicken stock or gravy to desired consistency.
Assemble mason jar by adding a half cup of stuffing to each followed by cranberry sauce, mashed potatoes, gravy and more stuffing. Continue with ingredients until mason jars are filled to the top.
Garnish with rosemary and additional bacon.
This is a great recipe to use up all those thanksgiving left overs. Get creative and use what ever you have left over from your holiday meal.
