This lemon, thyme and garlic filled “Marry Me Chicken” will get an instant yes at any dinner table.
|1||Maple Leaf Prime Naturally® Whole Chicken|
|1||Bulb of garlic, halved crosswise|
|5||Sprigs of thyme|
|2 tbsp||(30 mL) Soy sauce|
|½ cup||(125 mL) Fresh lemon juice|
POSITION an oven rack in the upper third of the oven. Preheat the oven to 400°F (200°C).
PLACE chicken breast-side down in a medium-roasting pan fitted with a rack. Insert both halves of garlic and the lemon inside the cavity of the chicken along with the sprigs of thyme. Rub the outside of the chicken with soy sauce and lemon juice and season with pepper.
PLACE the chicken in the oven and reduce the heat to 350°F (180°C). Roast uncovered for 30 minutes. Remove from the oven and using tongs, turn the chicken breast side up. Return to the oven and roast for another hour or until the juices run clear and the internal temperature reaches 185°F (85°C). Roasting times may vary depending on the oven.
ALLOW the chicken to rest for 10-15 minutes before carving. Pour the pan juices over the sliced meat and serve.
Garnish with fresh herbs and lemon slices.
